Apple Walnut Gorgonzola Salad
Nutty, creamy, sweet and tangy, all in one!
This recipe transforms a simple green salad into a sweet and tangy sensation. What’s special about it? Well, it’s nutty plus creamy plus sweet/tart. And you’ll want to make sure to have all three components in your mouth at every bite.
Tossing some kind of fresh or dried fruit, a great quality cheese and a yummy roasted nut into a salad is a great rule of thumb. You’ll be amazed what those three ingredients can do to a bowl of fresh spinach or lettuce. Adding the zing of a red onion with the sweetness of my Glazed Walnuts elevates it further by creating more layers of flavor.
Top it with a homemade salad dressing (don’t be afraid — vinaigrettes are easier than you think!), and you’ve got yourself a complex stunner suitable for both everyday and special-occasion meals. Trust me — the bowl will be empty and everyone will want the recipe!

Apple Walnut Gorgonzola Salad
INGREDIENTS
- 2 large handfuls fresh baby spinach
- 1 apple, cubed (I use Pink Lady®)
- 1/2 red onion, thinly sliced
- 1/2 c Glazed Walnuts (pre-packaged in the produce section of your grocery store or homemade — they’re easy to make — check out my Glazed Walnuts recipe!)
- 1/2 c Gorgonzola cheese, crumbled
- 1/2 c Honey Balsamic Vinaigrette (or as much as you want — see my recipe)
DIRECTIONS:
- Place baby spinach in large bowl.
- Add apple, onion, Glazed Walnuts and Gorgonzola.
- Toss to mix well.
- Drizzle with Honey Balsamic Vinaigrette and toss to coat well.
- Add a few more walnuts (because, hey, why not?) and devour.
