Homemade Marinara Sauce
Makes your home smell like Little Italy
Ditch that red sauce you buy in a jar, because my Homemade Marinara Sauce is fast, easy and heavenly. Its wonderful aroma will make your home smell like Little Italy. (Sometimes I dab it on my pulse points as if it were perfume! Well … not really.) I love it so much that every once in awhile I consider drinking it with a straw. I mean, this sauce should win a medal. It combines fresh, uncomplicated ingredients and goes with so many dishes: pasta, chicken, eggplant and other roasted vegetables, even rice. Is there anything better than tomatoes, garlic, onions and herbs all marinated into a delectable pot of goodness? I think not.

Homemade Marinara Sauce
INGREDIENTS:
- 1/2 c olive oil
- 1 onion, finely chopped
- 2 tbsp garlic, minced
- 2 (32-oz) cans crushed tomatoes (we use San Marzano)
- 2 dried bay leaves
- 1/2 tsp red pepper flakes
- 1/2 tsp dried oregano
As always
- Sea salt
- Freshly ground pepper
DIRECTIONS:
- In a large pot, heat olive oil over medium-high heat.
- Add onion and sauté until translucent, about 6 minutes.
- Add garlic and sauté about 3 minutes longer.
- Add tomatoes, bay leaves, pepper flakes and oregano; mix well.
- Sprinkle with salt and pepper and simmer about 30 minutes.
- Remove from heat and discard bay leaves.
- Sprinkle with even more salt and pepper if you like.
- Serve immediately over just about anything in your kitchen. (Or, if you can withstand the temptation, it’s the perfect recipe to make a day ahead. Just warm it up over medium heat.)
